  • 1 peeled tomato (50 g)
  • White wine (1 glass of 200 ml)
  • 1 green pepper (50 g)
  • 1 teaspoon of oregano (5 ml)
  • 3 tablespoons of olive oil (50 ml)
  • 1 teaspoon of ground paprika (5 ml)

Preparation

  • Wash, clean and chop the squid into slices.
  • Fry the garlic and onion in a pan with oil so that they are golden brown.
  • Preferably, crush the garlic and cut the onion into julienne.
  • When the garlic begins to brown, add the peppers cut into small pieces.
  • Then cook them until they soften a bit.
  • Chop the tomatoes into squares and then add them to the pan.
  • When they start to dissolve, add the squid, which will cook slowly in the sauce.
  • Season everything with the paprika powder, salt and pepper.
  • Also place a bay leaf to give the dish a characteristic aroma.
  • Then add the glass of white wine and a little water (enough so that the squid is completely covered).
  • You’ll know the squid is ready when you taste it. They should be tender and easy to chew.

  • 1 glass of white wine (200 ml)
  • 10 small squids (500 g)
  • 1 can of peas (200 g)
  • 2 ripe tomatoes (80 g)
  • 10 shrimps (300 g)
  • 1 green pepper (60 g)
  • one red pepper (60 g)
  • 1 cup of rice (200 g)
  • 1 large onion (80 g)
  • Olive oil
  • 4 eggs (100 g)
  • Salt (to taste)
  • Toothpick

Preparation

  • Thoroughly clean the squid, remove the skin and chop the tentacles into small pieces.
  • Do the same with the shrimp and set everything aside.
  • Chop the vegetables into small cubes and poach them in a saucepan with the olive oil.
  • The ideal is to add the vegetables in a specific order. Introduce the onion first, then the peppers and finally the tomato.
  • Add a pinch of salt and a pinch of sugar to remove the acidity. The idea is to let everything simmer well for about 30 minutes.
  • After half an hour, add the tentacles and cook for about 10 minutes.
  • Then add the shrimp and leave on the heat for five more minutes.
  • When finished, remove from heat and let cool well.
  • Take the calamari and fill them with the sauce.
  • Also reserve a portion for later. You must prepare them little by little and delicately, so that they are perfect.
  • Then pierce them with a toothpick so that the filling does not come out and brown them in a pan with oil.
  • When they are golden brown, place them in a casserole dish and cover them with white wine and water.
  • Cook them for 25 minutes, until the calamari is tender.
  • Add the rest of the sauce you prepared before, the peas and the cup of rice.
  • Adjust the flavor with salt and wait for the rice to cook slowly.
