The Lemon Pie Recipe

Preparation of the lemon pie.

Ingredients

For the shortcrust pastry:

  • Half a cup of flour
  • 100 grams of butter
  • Half a teaspoon of stevia powder
  • 3 egg yolks
  • 3 tablespoons of ice water

For the pie filling:

  • The juice of 5 lemons
  • Half a teaspoon of stevia powder
  • 75 grams of corn starch (corn flour)
  • 6 egg yolks
  • 4 egg whites
  • 45 grams of butter
  • Half a glass of cold milk
  • Three walnuts in small pieces

Preparation

  1. Start by greasing the pan with butter, as this will prevent the pie from sticking together.
  2. Now  preheat the oven to 170ยบ C
  3. Then you have to start preparing the shortcrust pastry, and  it’s really easy! To do this, we need to follow a few steps.
    First, we take a bowl and mix the flour with the butter. The dough will then be thinner. Just use your fingertips to evenly mix the indicated amount of flour with the butter.
  4. Now add the stevia, the three egg yolks and the water we need so that the dough is quite consistent. You have to knead well until it forms a ball. Then wrap the dough in cling film. You just have to let stand in the refrigerator for 15 minutes.
  5. Once the 15 minutes have passed, we see that the dough is then perfectly homogeneous. So it’s time to place it in the mold!
    It must therefore be molded well so that it fits perfectly to the shape, this is how it stays well glued. Remember that you should still leave an edge of at least two centimeters. This should be high enough so that we can get the mixture inside without overflowing.
  6. Bake the pie crust for about 25 minutes.
  7. Once cooked through, let cool to room temperature.
  8. Now we will prepare the lemon filling. It is also very simple! We will start by extracting the juice from the lemons requested, then we add half a teaspoon of stevia.
  9. Now pour the juice into a saucepan to heat it up, and let it boil.
  10. Then take half a glass of cold milk, and add the 75 grams of corn flour to it. It is then necessary to mix well so that everything is homogeneous.
    Once there are no more lumps, this mixture is added to the saucepan where the lemon juice is boiling. The mixture will then thicken and we will avoid lumps in the cream.
  11. While the mixture is gathering consistency, continue to mix. Then add the egg yolks and butter, while still mixing, of course.
  12. Once it’s ready, remove the mixture from the heat and let cool to room temperature.
  13. Then pour this delicious mixture inside the shortcrust pastry. And put it in the oven for another fifteen minutes.
  14. Now we’re going to make the meringue!  We must therefore beat the egg white. Once it’s done, decorate the pie as desired. Finally, you can put the pieces of nuts: it will give a perfect finishing touch to your pie!
  15. All you have to do is put the pie in the oven to brown it for a few more minutes. You can then present it in a large dish. The result is simply magnificent, and above all, delicious!
